Greek Souvlaki

Serves - makes 10-12 wraps
Preparation: 2-3 hours (marinate) | Cooking: 10 minutes

Ingredients:
800g lamb steak, cubed
1 tsp Spencers thyme
1 tsp Spencers oregano
½ tsp Spencers ground black pepper
½ tsp Spencers cinnamon
1 tsp Spencers garlic chopped
Juice of 1 lemon
2 tbsp Dandaragan olive oil
Pita bread & salad to serve
½ cup Greek yoghurt to serve

Method:
  1. In a large bowl combine thyme, oregano, pepper, cinnamon, garlic and lemon juice. Add lamb to bowl and mix until lamb is well coated. Leave to marinate for 2-3 hours in the refrigerator.
  2. Heat olive oil in a large frying pan and fry marinated lamb until brown and cooked through.
  3. Serve lamb in warm pita bread topped with salad, feta cheese and a spoonful of Greek yoghurt.
