Portugese Chicken

Serves 4
Preparation: 10 mins + 4 hrs to marinate | Cooking: 15 mins

Ingredients:
3 tbsp Spencers BBQ rub
2 tbsp Anchor white wine vinegar
Juice of 1 lemon
8 boneless chicken thighs or drum sticks

Method:
  1. Mix BBQ rub, vinegar and lemon in small bowl. Pour onto chicken pieces and mix until well coated.
  2. Leave to marinate in the fridge for 4 hours or overnight.
  3. BBQ or grill chicken until golden and cooked through.
  4. Serve with a garden salad or steamed vegetables.
