Seared Spicy Beef with Soba Noodle Salad

Serves 4
Preparation: 20 mins + 4 hrs to marinate | Cooking: 15 mins

Ingredients:
4 thick sirloin or scotch steaks
4 tbsp Spencers pepper steak rub
3 tbsp vegetable oil
300g soba noodles
1 stem lemon grass, sliced
6 Spencers Kaffir lime leaves
3 tsp Spencers garlic chopped
Juice of 1 lemon
2 tbsp light soy sauce
2 tsp palm or raw sugar
½ cup rice wine vinegar
1 red chilli, deseeded and finely chopped
½ cup mint leaves, chopped
½ cup basil, chopped
½ cup coriander, chopped

Method:
  1. Place steaks, pepper steak rub and oil into a bowl and mix until steak is well coated. Marinate in the fridge for 4 hours or overnight.
  2. Cook soba noodles according to instructions, drain rinse with cold water and set aside to cool.
  3. Add lemon grass, lime leaves, garlic, lemon, soy sauce, sugar and vinegar in a saucepan. Bring to the boil then reduce heat and simmer for 5 minutes. Strain through a sieve and set liquid aside to cool.
  4. Sear marinated steaks on a BBQ or in a grill pan for 2-5 minutes each side depending on your liking. Set aside to rest for 10 minutes before slicing.
  5. Combine noodles, cooled liquid, chilli and herbs in a large bowl and toss until combined. Serve on individual plates or a large platter and top with sliced beef.
