Spicy Beef Burrito

Ingredients:
  • 40g Spencers Mexican Spice Mix

  • 500g mince beef

  • ¾ tsp salt

  • 1 onion, finely diced

  • 2 garlic cloves, finely diced

  • 1 tbsp cooking oil

  • 400g refried beans

  • 1 tomato, diced

  • Cos lettuce, washed

  • 200g sour cream

  • Flour tortillas

Method:
  1. Mix the Spencers Mexican Spice Mix and salt together. Add half of the spice mix to the ground beef and mix until fully incorporated. Add the remaining spice mix and stir together.

  2. Heat cooking oil in a pan on medium heat. Add the beef mince and cook for 2-3 minutes, stirring continuously to break up any chunks. Drain any excess oil and add the diced onion and garlic. Cook for 2 minutes and set aside.

  3. Spread a layer of refried beans on tortillas. Spoon desired amount of beef mince and top with lettuce, tomato and sour cream. Fold tortilla into a burrito and serve.
